Lyoner sausage salad
with strawberries


LYONER SAUSAGE SALAD WITH STRAWBERRIES
4 servings

Ingredients:

500g Lyoner or Rookwurst
250g strawberries
100g spinach leaves
2 nos butterhead lettuce
250g asparagus (canned or glass)
150g baby peas (cooked)
2 tbsp white wine vinegar
2 tbsp sherry
4 tbsp oil (olive or canola)
salt
pepper
parsley for garnishing

Preparation:

  • Cut the Lyoner or Rookwurst into 1.5 cm cubes.
  • Wash strawberries and cut into halves
  • Wash spinach leaves and butterhead lettuce
  • Mix together sausage cubes, strawberries, spinach leaves and butterhead lettuce
  • Mix vinegar with sherry, salt and oil, and pour over sausage mixture.
  • Let stand for 10 mins, garnish with parsley, sprinkle with cracked black pepper and serve.
